Fruit Pectin Test
To test fruit for the presence of pectin sufficient to make jelly, try this;
Ø Extract 1 tablespoon of juice from your fruit and put it in a small glass container.
Ø Add 1 teaspoon of sugar.
Ø Add 1 ½ teaspoon of Epsom salt.
Stir until solids are dissolved, then let stand for 20 minutes.
If a solid mass forms or large mass clumps/ particles form then the fruit contains sufficient pectin for making jelly.
